Peach-Glazed Grilled Salmon

Ingredients
1 cup Butter (cubed)
1 cup Peach preserves
1 tablespoon Lime juice
1 clove Garlic (minced)
1/2 teaspoon Mustard
2 1 pound Salmon fillets
1/2 cup Fresh peaches (peeled & sliced)

Step by Step Instructions
  1. Stir the butter and peach preserves together in a microwave safe bowl. Microwave on high for 45 seconds to 1 minute.
  2. Stir the lime juice, garlic, and mustard in with the preserves mixture. Divide the mixture, some for a marinade, 1/2 cup for basting, and 1/2 cup for serving.
  3. Put the salmon fillets into a resealable plastic bag with some peach preserves mixture. Seal the bag and coat well, then allow to marinate for 20 minutes.
  4. Drain and discard the marinade. Lightly coat a grill rack with cooking oil and place the salmon fillet skin-side down on it.
  5. Cover and grill for 5 minutes, spoon some of the preserves mixture over the fillets and grill for 10 to 15 minutes, basting frequently with more preserves mixture.
  6. Serve the fillets with sliced peaches and the serving portion of the preserves mixture.
