Callidora Farms

Grass-fed, pasture raised meats
Callidora Farms is owned and managed by Raul and Genel Rivera (The Farmers). Farming is new to them, but it has been in Raul’s heart since his childhood days. In 2008, Raul began searching for the perfect land to purchase and start farming. After 5 years of searching, he finally found the perfect 71-acre plot in historical Madison, GA where he and his family could live the dream of operating a sustainable farm. Soon after buying the land, The Farmers realized that sustainable farming is both a way of life and a business. Having little knowledge in farming, the first year and a half was a definite learning curve. During that learning curve the one philosophy they adhered to was to provide natural solutions to all of the challenges that they face so that the animals experience the best life possible.
A growing number of people want to know where their food comes from, how it is being raised, and who is raising it. The Farmers believe that the best way to obtain these answers is to get connected to farmers who are very passionate about how food is raised. Their passion for staying connected to their food source drives them to continue to seek better ways to farm.

ALFN Local Food Club: The Market is Open with Plenty of Gifts!
Good Morning Market,
Is it officially the most wonderful time of the year yet? Cause it sure is starting to feel like it. The lights in my neighborhood are popping up night after night, some radio stations are now only playing holiday music, and everyone’s begun the mad scramble for gifts. Speaking of gifts, the market’s got plenty of ’em! Besides the incredible quality of our products, purchasing local really is the gift that keeps on giving. When you spend your money with a small Arkansas family business, it allows them to invest that money back into making even more wonderful products that we then get to enjoy! Products like…
- Cookies in a jar from Green Acres Atkins. These cute quart mason jar kits come complete with all of the dry ingredients for one of nine varieties of cookies…just add liquid ingredients and bake!
- Glazed pecan meats from Bluebird Hill Berry Farm. Pecan meats are coated with egg whites and a sugar cinnamon mix then baked to produce a wonderful snack. A delicious gift…if you can handle giving them away!
- Check out the gift baskets and sets section for some beautiful gift sets from Tammy Sue’s Critters. Order any combination of her wonderful goat’s milk soaps, lotions, body butters, lip balms, and hair bars….just let her know in your order comment which scents you’d like.
- Or snag some stocking stuffer individual soaps from Homayd Natural Care Products. They’ve got everything from all-natural hand sanitizing spray to butter bars.
- My wish list is full of canned and pickled products like apple thyme sauce, spicy garden pepper marmalade, and Caribbean Paw Paw Sauce. Just saying’…
Remember filling out a customer survey in September as part of ALFN’s strategic planning? Welp, I’ll be sharing the results of our first phase of planning this Wednesday, December 10th from 1-1:45pm at the Clinton School of Public Service Sturgis Hall Classroom I. Just e-mail tljohnson@clintonschool.uasys.edu if you plan on attending. If you can’t make it but are still interested in the results, e-mail me at arlocalfoodnetwork@gmail.com to receive a copy.
Thanks so much and happy shopping!

Recipes
Please, share your recipes with us on the Recipes tab. We’d all love to know how you use your Stones River Market products, so we can try it too! If you have created a dish and want to share with everyone, please send it to me.
The recipe this week came to me from an email I received using food still is season. Simply in Season by Mary Beth Lind and Cathleen Hockman-Wert. This book can be purchased from amazon.com.
Tish and I tried it earlier in the week. Tish thought it needed a few more potatoes and did add milk in place of some of the water.
Kale Potato Soup
What you’ll need:
1 large bunch of kale, chopped
1 tablespoon butter
1 large onion, chopped
1 clove garlic, minced
2 large potatoes or sweet potatoes, peeled and diced
5 cups vegetable broth (or 5 cups water with vegetable bouillon)*
Steam kale and set aside. Melt butter in a large stock pot. Add garlic and onion and saute until golden. Add potatoes and broth and bring to a boil. Reduce heat, cover, and simmer until potatoes are soft. Add steamed kale, then let cool a bit. Puree in batches in a blender until smooth. Add salt and pepper to taste.
*If you like a creamier soup, you can substitute some of the water out for milk.
I thank you for your interest and support of our efforts to bring you the healthiest, the freshest and the most delicious locally-produced foods possible!

Hi, all,
Welcome to another week of shopping at Manchester Locally Grown online farmers’ market. We are now open for ordering.
A message from Dogwood Valley Greenhouse:
We are taking orders through December 22 for beautiful Christmas kissing balls. Made with live greens and other natural materials, these balls are about 18" diameter and come in three styles. They are suitable to hang on a shepherd’s crook for a beautiful outside Christmas decoration. Each one is mounted on a sturdy hanger and includes a red ribbon bow.
Make a collection of common culinary herbs, to keep for yourself or to give as a gift. Please see the description under ‘Planters and Baskets’, and specify your choice of herbs from the list. If intended as a gift, please order early to allow time for custom preparation. Includes planter.
White City Produce and Greenhouses has added beautiful Christmas cacti to the market this week.
Cider and jelly, perennial plants, local baked goods, pork products, herbal bath & body products, local honey, fresh-laid chicken & duck eggs, and plenty more products are to be found on our market. Give them a try! Many of these items are suitable for gift-giving. Also remember our Gift Certificates available in any denomination for Christmas or other gifts.
And lastly, let us know if you are interested in a beautiful live Christmas wreath, made in three sizes and decorated by Petalland in Moore County. These are not currently listed on the market, but arrangements can be made to have them delivered to our market if you would like one.
REMEMBER:
A sampling of items available from our local farmers: (L to R) Christmas Cactus from White City Produce & Greenhouses, Sourdough Rolls from Basically Bread, Garlic Leaf Card Set from Solace Farms, Christmas Kissing Ball and Herb Planter Collection from Dogwood Valley Greenhouse.
We’ll see you for pickup of your order on Thursday between 3:00 and 4:30 at Square Books, 113 E Main, Manchester. We can also hold your order in the refrigerator till Friday morning, if that’s more convenient for you. Just call (931) 273-9708 if you prefer to utilize this free service.
